I'm loving all of these Snow Days we're getting. Good thing Connecticut has no idea which way to turn when it comes down in heaps, and we're all stuck in our houses until someone can flag down a snow plow or shovel their way out (and let me tell you, fourteen inches isn't the easiest to shovel). In the meantime, what better than to indulge this morning's uber-silly mood? Having just woken up a mere hour ago, my twelve hour slumber has made room for my incredibly silly side.
I'm not usually one for ice cream (especially in the winter), but I couldn't resist the thought of making super-easy, super-delicious ice cream sandwiches that not only remind me of childhood (hello ice cream trucks!), but are sure to feel good on my slow-to-heal sore throat. We're not bakers, but my household has an extensive collection of sprinkles -- all kinds from fine sparkles, to generic rainbow, to pastel flats and crazy holiday shapes. Betty Crocker Chocolate Chip cookie mix made it easy to quick-bake the bestest, softest, round cookies, and my dad's stash of mint-chocolate chip, vanilla and creme de leche ice cream tubs allowed me to make quite the little assortment of sandwiches. My icy treats don't look nearly as glamorous as they do in the picture, but they sure are delicious. Did I mention that these babies go infinitely better with a cold glass of skim milk? Yum.
